After trying his hand at military life, Hans moved to Ontario in the late ‘90s for an apprenticeship at The Church Restaurant. Several years later, he made his way to downtown Toronto to work for the likes of Susur Lee and Marc Thuet. One weekend, Hans ran into Momofuku alumnus Mitch Bates on a recruiting trip—and he’s been at Noodle Bar ever since. Likes: heavy music, swear words, soccer, and American muscle cars. Dislikes: boat rocking, gum chewing, and warm beer.
Steven has worked in restaurants since the age of 15, but he became passionate about food and wine after completing his BSC in Psychology at the University of Toronto. He went on to complete his sommelier diploma with the Canadian Association of Professional Sommeliers.
Born on the north coast of Colombia, Dwayne dove into restaurant life in 2011 and hasn’t looked back. He joined Momofuku in 2016 and spends his days taking on new challenges and learning all that he can about the food industry.
